​Ingredients:
  • 1 cup of rice flour - or you can you Bisquick (pancake flour).
  • 1 cup of white sugar
  • 3/4 cup of sour cream or 1/2 cup of crema
  • 4 oz. of Parmesan cheese or queso duro
  • 3 eggs, separated into yolks and whites
  • 1 stick of melted, salted butter
  • 1 tsp. of baking powder
  • Sesame seeds to garnish top
                                        Quesadilla Salvadoreña 
Directions:
  • Beat egg whites until firm, but not stiff, and set aside.
  • Beat butter and sugar on high until light - fluffy.
  • Add egg yolks one at a time and beat until creamy.
  • Add Parmesan cheese gently and make sure it is well incorporated.
  • Fold in in sour cream with baking powder (use a spatula).
  • Sift rice flour over the mixture, use spatula to incorporate into mixture.
  • Now fold in egg whites with the same spatula.
  • Pour batter into a 13x9, rectangular, glass baking dish (you can find this at your local grocery store I believe).
  • Now Sprinkle sesame seeds on top  (this is my favorite part).
  • Lets Place dish into oven and let it bake at 350 degrees for about 38 minutes or so.
